The BEST Cauliflower Pizza Crust

If you have heard me at all over the last decade, you know that I am a HUGE cheerleader for all things plants (plant food, plant medicine, plant derived essential oils). No matter who you are, or what your food philosophy, I can trust that you can and should get the majority of your intake via veggies, fruits, nuts, seeds, and grains. It's just the truth! :) And I get to say that because this is MY blog.

Further, I has been my mission to introduce ways to incorporate said nourishment in delicious and convenient ways. Enter cauliflower pizza. No, this is not something new. BUT I receive messages from people asking how to make it just so, ALL. THE. TIME. You can google it, yes. But I figured I would show you how in the most simplest terms during my weekly Facebook LIVE cooking show over on the Rythmia Facebook page.

So, who has tried to make cauliflower crust pizza at home? How did it go? Tag me in your food pic over on Instagram! Make this. Love this.

Cauliflower Crust for Pizza

(makes 2X 12 inch pies)

5 cups cauliflower cut in florets, washed, drained 2 cloves garlic, divided 1 ½ cups grated cheese (swiss, parm, vegan, divided) 2 large eggs, lightly beaten 2 tablespoons chopped fresh parsley, dried oregano, or mixed herbs ¼ teaspoon salt

Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper. 1) Place 1/2 of the cauliflower and 1 clove garlic in a food processor; process until finely chopped.

2) Dump mixture out into center of a clean tea towel and wrap into a pouch. Squeeze to release excess water. Squeeze out as much as you can.

3) Add dried cauliflower/garlic mixture to large mixing bowl and stir in 3/4 cup cheese, 1 egg, herbs and salt.

4) Spread the mixture into a 12-inch circle, 1/4 inch thick, on the prepared baking sheet.

5) Bake until brown and crispy around the edges, about 40 minutes.

Repeat steps 1 through 5 with remaining ingredients to form second pizza.

Remove the crusts from the oven and cover evenly with your favorite pizza toppings. Return the pizza to the oven and continue baking until the toppings are heated through, about 5 minutes more.
