MMMMM, Kale. Massaged.
The first time I prepared a kale salad for my sister's boyfriend was in September of 2015. To this day, he says he still loves the leafy green, so long as it is rubbed with love.
Simple Massaged Kale Salad
1 large bunch of kale, washed, and dried
juice of 1 small lemon
1 tablespoon raw apple cider vinegar
2 T olive oil
2 T raw honey
salt & pepper to taste
Roll the kale into tight bunnies, and using a chef's knife, cut into thing shreds, and then cut again lengthwise so you have a thick "slaw".
Dump the kale into a large bowl.
Just before serving, drizzle remaining ingredients over kale. Get your hands in there, and rub, massage, and squeeze the leaves so that you begin to wilt and breakdown the cell walls of the kale. It will begin to release some juices.
Serve.
* Delicious with add-ins like red pepper (pictured), raisins, goji berries, mango, nuts and/or seeds, etc.
